John Gregg's Brownies Adapted from "Beat This!" by Anne Hodgman Butter a 9" round or an 8" square pan. Mix, with an electric mixer for a while: 1 cup sugar 2 eggs a pinch of salt a good dollop of vanilla Meanwhile, melt over very low heat: 1 stick of butter (1/2 cup) When it is mostly melted, add: 4 oz semi-sweet chocolate chips (I use Ghirardelli) 4 oz unsweetened chocolate Melt the chocolates and the butter together until smooth. Turn off the heat when it is almost completely melted, and stir - the remaining lumps will melt. Mix the butter/chocolate mixture into the egg/sugar mixture. Add: 1/2 cup flour almost a cup of walnut pieces, depending your preference Spread batter in pan and bake at 375 for 20-30 minutes. Use a toothpick to determine doneness. Unlike testing a cake, if the toothpick comes out completely clean, the brownies are overdone. Err on the side of underdone.
